Happy Fall everyone!  Did you miss me?  I missed you.  I’m sorry that I’ve been gone so long.  I’ve been doing some soul searching and by soul searching I mean ripping myself from the grips of the retail world and searching for a bonafide big girl job.  I’m whipping up some posts for Monday that I hope you’ll love but, in the mean time, here are some gems I found that made me think of you.  Happy clicking!

Friday at long last!  What are you all up to this weekend?  I’m hoping to finish up my spring cleaning and organizing.  I’m itching to throw a spring-time cocktail party.  The sun is shining brighter and longer and I think there’s no better way to welcome the warmth than with food you can eat with your fingers, a couple great cocktails and a bunch of great friends.  While I day dream about the smell of spring and the sound of clinking coupes, why don’t you take a gander at some fun things I found around the web this week?

My Avo-racha Chicken Salad

I don’t know about all of you, but when the weather starts to get warmer, I like to eat lighter food with super fresh flavors.  This week I whipped up a dish with some of the things I had left over in my fridge that needed to be used.  The result?  Avo-racha Chicken Salad.  Once I tasted it, I thought it was good enough to share.  It’s a super easy, quick, one dish meal that’s perfect to take to work or on a picnic.

(Makes enough for 1 hungry person or two moderately hungry people…)

What You Need:

  • 1 ripe avocado
  • 1/4 of a red or white onion, finely chopped
  • 1 Tbsp of chopped, fresh cilantro (optional)
  • 1 Tbsp of lemon juice
  • 1 1/2 Tbsp of Sriracha (this is a suggestion, do as you please)
  • 1 cold, grilled chicken breast, cubed. (I don’t have a grill so I bought my grilled chicken breast at Whole Foods.  A cold baked chicken breast would surely be fine too.)
  • 1 tsp of salt
  • 1/2 tsp of black pepper

What You Do:

  1. Combine all ingredients in a bowl.
  2. Eat the contents of the bowl.

 

If you feel so incline, this would be great on top of a piece of crust bread or even in a wrap.  Let me know what you think and happy eating!

Hey there you wonderful readers you, happy Friday!  I’m sorry I’m getting this to you so late but I had work and then I got a little carried away in my excitement of the return of House of Cards!  This weekend I’m going to a stranger’s birthday party, getting ready for one of my closest friends to come and visit and holing up in a cozy coffee shop to continue the full-time job hunt.  What are you up to?  Something wonderful I hope.  Here are some things I found around the web this week that I thought I’d share with you.

This weekend is going to be super low key for me.  I’m thinking reading, bubble baths, yoga, Netflix, a museum day and maybe some tinkering with this cookbook.  Also, The Oscars are finally here (February 28th)!  I can’t wait for the who-wore-it best lists and awkward and/or wonderful acceptance speeches.  In the meant time, here’s some stuff I found around the web this past week, happy clicking!

I Dunno, What Do You Want to Do?

Like many, I suffer from severe indecisiveness.  This malady is made worse when having to make a decision with one or more other people while trying to decide what to do or, even harder, where to eat.  A few years ago, my father, in his travels, discovered an incredible app that completely solves the problem.  It’s called UrbanDaddy, have you heard of it?  It’s got listings for most major cities and not only recognizes which city you’re in, but also  which neighborhood you’re in– how cool is that??

All you have to do is plug in what you’re looking for (brunch, dinner, drinks, dessert), who you’re with (boyfriend, girlfriend, friends, parents, your ex, you name it) and then you get to plug in a wild card.  You can stipulate that you want karaoke, dancing, to breakup with whoever you’re with, you’re looking for a place with good beer, the list goes on.  It’s amazing.  After you input your information you just have to click go and it generates a long list of possible places that you could check out.  While it doesn’t make the decision for you, it definitely makes the process a million times easier.  Check it out he next time you’re playing the “I dunno game” and let me know what you think!

I’m Late, I’m Late…

for a very important [blog] date.  Sorry that I dropped the ball yesterday.  I don’t know about you guys but this week has been tough.  Hopefully the weekend will bring less stress and give some time for some much needed R&R.  How are all of you spending your next 48 hours of freedom?  Here are some interesting things I found around the web this past week.

Move Over Wheaties

Image 2-8-16 at 3.21 PMThere’s a new breakfast in town.  Have you tried chia pudding?  I made some this week and I thought I would share it with all of you.  It’s so easy to make and lasts for a long long time in your fridge.  Not only is it a great breakfast, it’s also the perfect snack.  Let me know what you think.  Here’s the how-to:

You’ll Need:

  • 1 Cup of raspberries (fresh or frozen, I used fresh)
  • 1 Cup of milk (you can use any kind, I opted for almond milk)
  • 1 tsp of honey
  • 1 tsp of pure vanilla extract
  • The juice of one lemon
  • 2 Tbsp of greek yogurt
  • 4 Tbsp of chia seeds
  • A food processor or blender
  • 1 medium-sized container (I just used glass tupperware but you could use any kind of container that will fit in your fridge.)

Directions:

  1. In your blender or food processor combine all ingredients EXCEPT the chia seeds and blend until smooth.
  2. Pour the mixture into your chosen container and sprinkle in your chia seeds.
  3. With a spoon or rubber spatula give the mixture a good stir to make sure that the chia seeds are fully incorporated.
  4. Cover your container and place it in the fridge.  Let it sit for a minimum of an hour so that the chia seeds have time to absorb the liquid, this is what creates the pudding-like consistency.  I like to let mine sit over night so that it really gets the opportunity to set up.

I poured my pudding over a sliced banana and topped it with coconut and walnuts but you could top yours with anything your heart desires.  You can do all kinds of things to make this recipe your own, kind of like having a sundae for breakfast except with fruit so it’s more adult and nutritious (and socially acceptable).  Enjoy!

 

 

I Made Some Soup…

Okay, I made a LOT of soup.  Around this time of year I always get what I call fall sick.  Living in Florida, I miss leaves, crisp air and, of course, fall flavors.  I think a really good butternut squash soup tastes like fall in a bowl so I decided to make some.  I opted to put some turkey bacon on top of it at the end but the recipe itself is vegan, gluten free and really easy meaning this is a food everyone can love.  It was so good I decided I would share.

What You Need to Make the Soup:

-1(2 1/2 to 3 lb) butternut squash, peeled, seeded and cut into 2 inch chunks.  **Check your local grocery store to see if they have pre-cut butternut squash, I found some at Trader Joe’s.

-1 Tbsp of olive oil

-1 chopped onion

-1 large leek (only the pale green and white bits) sliced

-2 garlic cloves, minced

-3 cups vegetable broth

-1 1/2 tsp dried sage, crumbled

-1/4 tsp black pepper

-a pinch of cayenne

How to Make the Soup:

1) Place your squash in a steamer basket over about an inch of boiling water in a large saucepan.  Cover it up and cook it for about 15 minutes.

2) While your squash is steaming, heat up your oil in another saucepan on medium heat.  Add your onion, leek and garlic and let it cook while your stir until it’s soft.  It should only take about five minutes.

3) Add your squash and remaining ingredients to your onion, leek and garlic and bring it to a boil.  Once it’s boiling, reduce the heat, cover the pot and let it simmer until the squash is very soft.

4) Puree the soup in a food processor or blender in batches if needed.

I put mine into a covered bowl so that I could eat it throughout the week but if you want to eat it immediately and feel like it cooled off a little too much you can reheat it back in your saucepan.
