Peachy Green Smoothie

I’m trying to get creative with my snacks.  I’m the worst when it comes to mindless snacking especially when I’m at home blogging, answering e-mails and doing general busy work.  I’ve decided to jump on the smoothie train and give them a go.  Here’s a recipe I came up with that tastes good, keeps you full and is 100% guilt free.  (Don’t let the grayish green color deter you, I promise it’s good.)

 

What You Need:

  • 3-4 cups of baby spinach
  • 1 1/2 cups of frozen peaches
  • 1 cup of frozen mixed berries
  • 1 Tbsp of honey
  • 1/2 cup of water
  • 1/4 cup of almond milk

 

What You Need To Do:

  • Combine them all in a blender.
  • Drink it

Do you ever save voicemails?  I do.  A short and sweet message from the boyfriend, an encouraging voicemail from my mom, a quick fifteen second blurb from my best friend that is always sure to make me laugh when I need it most; I save all of my favorites.  This year for Valentine’s Day, CNN did a special project called “Love Story”.  They provided a phone number and asked people from all over to call in and leave a voicemail message about love.  The moment they met their soulmate, a chance encounter with a perfect stranger or even the one that got away.  Go check them out, I promise you won’t regret it.  What’s your most memorable love story?

Have a LOVE-ly Weekend

Happy (almost) weekend everyone!  It’s supposed to get pretty chilly around here so I plan to cozy up on my couch with large cups of coffee and persevere in the ever-daunting job search.  To all you employed folks out there, what were some helpful things you learned while you were on the hunt?  Any sage advice for me?  Here are some gems from the internet that I found this week.

Are you as completely and totally obsessed with the Netflix Original Series Making a Murderer as I am?  Part of me hopes that, for your sake, you aren’t BUT if you are here is just a handful of the totally hilarious parodies and memes the show has inspired.  (Which one is your favorite?)

I’m such a ‘UGE fan of Bad Lip Reading.  Here is one for the first Democratic debate and here is one for the first Republican debate.  I will truly never tire of these.

I wish I had seen this post earlier!  Next year I’m totally throwing a Galentine’s Day party even Leslie Knope would be impressed by.

Finally, a product that brings an end to the “I dunno, what do you want to do” conversation between you and your significant other.

This short little article and diagram on the effective weekend habits of successful people was really interesting.

So, this is one of the craziest/ coolest/ strangest/ sweetest things I’ve ever seen.

Being a Human is Hard…

… but I think being an adult human is harder.  Fortunately I discovered the Society of Grownupsa company that works to help young adults with financial and career planning.    They offer classes, supper clubs and even host daily walk-in times so that you can drop in just to get some quick advice.  They also have a truly excellent blog.  While they are currently only located in the Boston area, they’ve just announced that they will be expanding and opening 10 more locations throughout the nation.  Their next stops include New York and Philadelphia.  Even if you don’t have a soon-to-be location near you, you can still sign up to receive their news letters and browse their web.  I wouldn’t dane to say that I understand how to plan for retirement or a down payment on a house, but it’s nice to know that there are resources that can show me the big kid ropes.  How cool does this sound?  Do you have a resource like this near you?

Move Over Wheaties

Image 2-8-16 at 3.21 PMThere’s a new breakfast in town.  Have you tried chia pudding?  I made some this week and I thought I would share it with all of you.  It’s so easy to make and lasts for a long long time in your fridge.  Not only is it a great breakfast, it’s also the perfect snack.  Let me know what you think.  Here’s the how-to:

You’ll Need:

  • 1 Cup of raspberries (fresh or frozen, I used fresh)
  • 1 Cup of milk (you can use any kind, I opted for almond milk)
  • 1 tsp of honey
  • 1 tsp of pure vanilla extract
  • The juice of one lemon
  • 2 Tbsp of greek yogurt
  • 4 Tbsp of chia seeds
  • A food processor or blender
  • 1 medium-sized container (I just used glass tupperware but you could use any kind of container that will fit in your fridge.)

Directions:

  1. In your blender or food processor combine all ingredients EXCEPT the chia seeds and blend until smooth.
  2. Pour the mixture into your chosen container and sprinkle in your chia seeds.
  3. With a spoon or rubber spatula give the mixture a good stir to make sure that the chia seeds are fully incorporated.
  4. Cover your container and place it in the fridge.  Let it sit for a minimum of an hour so that the chia seeds have time to absorb the liquid, this is what creates the pudding-like consistency.  I like to let mine sit over night so that it really gets the opportunity to set up.

I poured my pudding over a sliced banana and topped it with coconut and walnuts but you could top yours with anything your heart desires.  You can do all kinds of things to make this recipe your own, kind of like having a sundae for breakfast except with fruit so it’s more adult and nutritious (and socially acceptable).  Enjoy!
